Welcome to my blog! I never thought I’d write a pastry BLOG one day, but since working as a gluten-free, lactose-free and vegan consultant, I have had more and more requests from you.
Finally having the opportunity to devote part of my time to writing (for those who know me, you know what I’m talking about !), I would like to start sharing my know-how and my breakthroughs with you in this way that we converse together on what I will post here.
It is also for me the opportunity to share with you a little more about my pastry perspective. I will create recipes especially for this blog but also show you the techniques, materials and different ingredients that I use in my research and creations.
I hope you enjoy the content and most importantly, don’t hesitate to give me your own ideas for content. This blog will thus be a real place for discussion and research around what is, in my opinion, pastry in line with the world of today and tomorrow.
